- 100 gm: Aubergine (egg plant)
- 1 tsp: Turmeric powder
- 2 tbsp: Mustard oil
- Salt to taste
- Cut the aubergines lengthwise.
- Rub in salt and turmeric. Heat the mustard oil in a frying pan. Add the pieces of aubergine to it and keep turning the sides to cook evenly on either side.
- Serve hot.
