Kachumber

• 2-3 : Large tomatoes, diced
• 1 large: Cucumber, peeled and finely diced
• 1/4 cup: Onions, finely diced
• 1-3 : Hot green chilies, finely chopped
• 3-5 Sprigs: Cilantro leaves
• 2-3 teaspoons: Vegan sugar (or granulated sugar)
• 3.5 Tablespoons: Lemon juice
• 3/4 teaspoon: Salt

1. Combine all ingredients, mixing well.
2. Serve chilled.
3. Goes well with spicy curries.
