Zunka Bhakri
Zunka Bahakri is an important dish
from west India cuisine. It is one of the most important Maharashtra
cuisine. Zunka bhakri is a part of daily meal in rural Maharashtra. Zunka is
the versatile dish from rustic Indian recipe, prepared with besan and many
spices with smooth texture. Try this hot and simple recipe from India with
flavored chutney.
Ingredients
- For the Wet Mix (Ghol)
- 1 cup: Chickpea flour (besan)
- 3/4 cup: Chopped onions
- 1 tsp: Red chilli powder
- ½ tsp: Turmeric powder
- 2-3 : Curry leaves
- 1 tsp: Coriander leaves
- 1 glass water
- For the Onion Mix
- 3/4 cup: Chopped onions
- ½ tsp: Garlic paste
- ½ tsp: Ginger paste
- ½ tsp: Chopped green chillies
- 1 tsp: Mustard seeds
- ½ tsp: Cumin seeds
- 1 tsp: Salt
- 4 tsp: Oil
Method
- Mix water, onions, chilli powder, turmeric powder, curry leaves,
coriander leaves and chick pea flour to make a `ghol' or a wet mix.
- Heat oil in a wok (round bottomed metal pan). Add mustard seeds,
cumin seeds, garlic paste, ginger paste, chopped onions, chopped green
chillies and salt.
- Stir till the onions turn brown. Add the onion mix to the wet mix.
Stir briskly for 4-5 minutes till all the water evaporates. The Zunka is
ready.
- Serve with garlic chutney and `jawaar' or `baajra' rotis.
