Petha Burfi

Petha is a world famous sweet dish from India. Likewise, Burfi is another popular sweet dish of iNdian cuisine. Here is an easy recipe combining the two sweet favorites to give a perfect combination in the form of Petha Burfi.

  • 1 kg White Pumpkin
  • 1/2 Kg Sugar
  • 2 tsp Calcium Hydroxide
  • 1/2 tsp Alum powder
  • Drops of Rose water
  • Drops of Kewra Essence
  • 2 cup Water
  1. Take 1/2 cup of water and dissolve alum in it. Keep it aside.
  2. Dissolve calcium hydroxide in liter water.
  3. Strain with a clean cloth twice.
  4. Now peel pumpki and discard seeds.
  5. Mush it from center and cut into rectangular shapes.
  6. Using a fork, prick all over.
  7. Put pieces in calcium hydroxide water and soak for 30 minutes.
  8. Drain and wash under clean running water for 2-3 minutes.
  9. Put in a bowl and sprinkle alum water.
  10. Shake accordingly so as to coat all pieces evenly.
  11. Take a large heavy pan to boil the pieces after draining them properly.
  12. Boil til a little soft and exuding water.
  13. Prepare sugar syrup by boiling sugar and water, till 2 1/2 thread consistency.
  14. Put drained pumpkin pieces in syrup.
  15. Now boil the syrup till it becomes thick again.
  16. Remove from the heat and keep it covered with a mesh for overnight.
  17. Drain and boil syrup again till thick.
  18. Now add pieces and reboil for 5 minutes.
  19. Drain out excess syrup.
  20. Sprinkle essence and rose water .
  21. Allow the Petha Burfi to cool completely.
  22. Refrigerate and serve delicious Petha Burfi.
